Whole30 Day 1 recap

So here is a recap of my first day on Whole30 (5/4).

Breakfast:
Sweet potato hash (shredded sweet potatoes, onion, garlic, whole30 approved bacon all cooked in EVO)
2 whole scrambled eggs (cooked in bacon grease)
1/2 cup blueberries

Lunch:
Tuna salad on a bed of fresh spinach (tuna, home made olive oil mayo, pickle relish, and hard boiled eggs) ***my 12 year old son asked for seconds he enjoyed it so much!!!

Snack while kayaking:
a handful of roasted almonds
small apple

Dinner:
Meatloaf (ground beef, almond flower, egg, grated zucchini and carrots, garlic and Italian seasoning)
Roasted cauliflower (cauliflower, garlic, olive oil)
